Ingredients

CARROT MUFFINS

  • 3 cups of almond flour
  • ¼ cup no-calorie sweetener
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 3 eggs
  • 1 cup carrots, grated
  • 1 Vanilla Quest Milkshake
  • ½ cup 0% Greek yogurt
  • 1 teaspoon vanilla

Cream:

Addition:

  • 2 tablespoons chopped walnuts
  • 2 tablespoons of grated carrots

Method

  1. Preheat the oven to 350 F and prepare a muffin pan with liners.
  2. In a bowl, whisk together the almond flour, baking soda, salt, sweetener, and spices.
  3. In another bowl, whisk together the eggs, carrots, yogurt, Vanilla Quest shake, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and stir until smooth.
  5. Fill the lines ¾ full and bake the cupcakes for 18-20 minutes. Let cool.
  6. Make the frosting by using a hand mixer to combine the cream cheese and butter until fluffy.
  7. Add the sweetener and protein powder and mix until smooth. Use a spoon to frost the cupcakes.
  8. Add topping ingredients to a bowl and combine. Cover the cupcakes with the mixture and serve.
